Ingredients

  • 2 sub rolls, halved
  • 6 slices bacon, cooked until crispy
  • 150g (5 oz) turkey lunch meat
  • 100g (3.5 oz) salami, thinly sliced
  • 100g (3.5 oz) pepperoni, thinly sliced
  • 4 slices provolone or swiss cheese
  • 1 large tomato, sliced
  • 0.5 small red onion, thinly sliced
  • 2 cup lettuce, shredded
  • 0.25 cup italian olive salad (giardiniera)
  • 1 tbsp sub oil or extra virgin olive oil
  • 0.5 tsp lemon pepper seasoning
  • 0.5 tsp black pepper
  • 0.5 tsp italian seasoning

Instructions

  1. Cook bacon in a skillet over medium heat for 6-8 minutes until crispy, then drain on paper towels.
  2. Slice tomatoes and onions; season them in a small bowl with lemon pepper, black pepper, and Italian seasoning.
  3. Layer the turkey, salami, and pepperoni onto the sub rolls, followed by the cheese slices.
  4. Toast the sub rolls in an oven or toaster oven at 180°C (350°F) for 3-5 minutes until the cheese is melted and bread is warm.
  5. Top the toasted sandwiches with the seasoned tomatoes, onions, shredded lettuce, and crispy bacon.
  6. Drizzle with sub oil and top with the Italian olive salad before closing and serving.
