Classic Smash Burgers by Leannwilliamsss
Crispy-edged seared beef patties topped with melted cheese on toasted buns with caramelized onion bits.

Ingredients
- 450g (1 lb) ground beef (80/20 fat ratio)
- 4 slices american cheese
- 2 brioche burger buns
- 1 small yellow onion, finely diced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp neutral oil or butter
Instructions
- Preheat a cast-iron skillet or griddle over high heat for 5 minutes until very hot.
- Divide the beef into four equal portions and roll into loose balls; do not pack them tightly.
- Place the onion pieces onto the hot skillet, then place a beef ball directly on top of each pile of onions.
- Smash the beef balls firmly with a heavy spatula or burger press until thin, pressing the onions into the meat, and cook for 2-3 minutes until a deep brown crust forms.
- Flip the patties, top each with a slice of cheese, and cook for 1-2 minutes until the cheese is melted and the meat is cooked through.
- Toast the buns in the same pan for 30-60 seconds until golden, then assemble the burgers with two patties per bun.
