Puerto Rican Pastelón by Lahbco

Sweet, ripe plantain layers baked with savory seasoned ground beef and melted dairy-free cheese.

Ingredients
- 4 large yellow plantains (very ripe, black skins)
- 1 lb ground beef
- 1/2 cup sofrito
- 8 oz tomato sauce
- 2 cup dairy-free shredded cheese
- 1 tsp adobo seasoning
- 2 tbsp vegetable oil (for frying)
Instructions
- Peel the plantains and slice them lengthwise into 1/4-inch strips until ready to serve.
- Heat oil in a large skillet over medium heat and fry the plantain strips for 2-3 minutes per side until golden brown; drain on paper towels.
- Brown the ground beef in a separate skillet over medium-high heat for 6-8 minutes until fully cooked.
- Stir in the sofrito, tomato sauce, and adobo seasoning; simmer for 5 minutes until the flavors meld.
- Preheat your oven to 375°F (190°C).
- Assemble the pastelón in a 9x9 baking dish by layering half the plantains, all of the beef mixture, half the cheese, the remaining plantains, and finishing with the rest of the cheese over medium heat until heated through, about 5 min.
- Bake for 20-25 minutes until the cheese is melted and bubbly.
