Filipino Chicken Afritada by Kuyajsonn

Tender chicken simmered in a savory tomato-based sauce with hearty vegetables and aromatic spices.

Ingredients
- 1 kg chicken, cut into serving pieces
- 1 cup potatoes, peeled and cubed
- 1 cup carrots, peeled and sliced
- 1/2 cup green bell pepper, sliced
- 1/2 cup red bell pepper, sliced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 cup tomato sauce
- 1/4 cup soy sauce
- 1 tbsp sugar
- 2 bay leaves
- 1 tsp whole black peppercorns
- 2 tbsp cooking oil
- 2 cup water
Instructions
- Heat cooking oil in a pot over medium heat. Sauté garlic and onion until fragrant and translucent, about 3-5 minutes.
- Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes.
- Pour in tomato sauce, soy sauce, water, sugar, bay leaves, and black peppercorns. Stir to combine until ready to serve.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Add potatoes and carrots to the pot. Cover and continue to simmer for another 15-20 minutes, or until vegetables are tender.
- Stir in the sliced bell peppers and cook for an additional 5 minutes until slightly softened but still crisp.
- Taste and adjust seasoning if necessary. Remove bay leaves before serving until ready to serve.
