Filipino Chicken Afritada by Kuyajsonn

Tender chicken simmered in a savory tomato-based sauce with hearty vegetables and aromatic spices.

Ingredients

  • 1 kg chicken, cut into serving pieces
  • 1 cup potatoes, peeled and cubed
  • 1 cup carrots, peeled and sliced
  • 1/2 cup green bell pepper, sliced
  • 1/2 cup red bell pepper, sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cup tomato sauce
  • 1/4 cup soy sauce
  • 1 tbsp sugar
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 2 tbsp cooking oil
  • 2 cup water

Instructions

  1. Heat cooking oil in a pot over medium heat. Sauté garlic and onion until fragrant and translucent, about 3-5 minutes.
  2. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes.
  3. Pour in tomato sauce, soy sauce, water, sugar, bay leaves, and black peppercorns. Stir to combine until ready to serve.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Add potatoes and carrots to the pot. Cover and continue to simmer for another 15-20 minutes, or until vegetables are tender.
  6. Stir in the sliced bell peppers and cook for an additional 5 minutes until slightly softened but still crisp.
  7. Taste and adjust seasoning if necessary. Remove bay leaves before serving until ready to serve.
