Creamy Brown Butter Caramelized Onion Pasta by Klopokitchen

Rich, nutty brown butter sauce tossed with sweet caramelized onions and roasted garlic over pasta.

Ingredients
- 250g (8 oz) pasta of choice
- 4 tbsp unsalted butter
- 2 large yellow onions, thinly sliced
- 1 whole garlic bulb
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese, grated
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
Instructions
- Preheat oven to 200°C (400°F). Slice the top off the garlic bulb, drizzle with oil, wrap in foil, and roast for 40 minutes until soft.
- Sauté sliced onions in a large pan over medium-low heat with a pinch of salt for 25-30 minutes, stirring occasionally until deeply golden and caramelized.
- Cook pasta in a large pot of salted boiling water according to package directions until al dente; reserve 1/2 cup of pasta water before draining.
- Add butter to the pan with onions and cook over medium heat until it foams and turns a nutty brown color, about 3-5 minutes.
- Squeeze the roasted garlic cloves into the pan and mash into the brown butter, then stir in the heavy cream and simmer for 2 minutes.
- Toss the cooked pasta into the sauce, adding reserved pasta water as needed to reach a creamy consistency, and stir in parmesan cheese before serving over medium heat until heated through, about 5 min.
