Ingredients

  • 1 orange bell pepper, finely diced
  • 1 red bell pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 2 jalapeños, seeded and finely diced
  • 15 oz canned black beans, rinsed and drained
  • 15 oz canned corn, drained
  • 1/2 cup fresh cilantro, chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt

Instructions

  1. Dice the orange, red, and yellow bell peppers, red onion, and jalapeños into uniform, small pieces using a vegetable chopper or knife.
  2. Combine the diced vegetables in a large mixing bowl with the rinsed black beans and drained corn.
  3. Add the chopped cilantro to the vegetable mixture and toss gently to combine
  4. Whisk together the olive oil, lime juice, and salt in a small bowl until emulsified.
  5. Pour the dressing over the salad and toss thoroughly to coat all ingredients evenly before serving.
