Ingredients
- 1 orange bell pepper, finely diced
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
- 1/2 red onion, finely diced
- 2 jalapeños, seeded and finely diced
- 15 oz canned black beans, rinsed and drained
- 15 oz canned corn, drained
- 1/2 cup fresh cilantro, chopped
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1/2 tsp salt
Instructions
- Dice the orange, red, and yellow bell peppers, red onion, and jalapeños into uniform, small pieces using a vegetable chopper or knife.
- Combine the diced vegetables in a large mixing bowl with the rinsed black beans and drained corn.
- Add the chopped cilantro to the vegetable mixture and toss gently to combine
- Whisk together the olive oil, lime juice, and salt in a small bowl until emulsified.
- Pour the dressing over the salad and toss thoroughly to coat all ingredients evenly before serving.
