Cantonese Style Steamed Cod by Khinskitchen

Delicate steamed cod fillet topped with aromatic ginger and green onions in a savory soy glaze.

Ingredients

  • 450g (1 lb) cod fillet
  • 25g (1 oz) ginger, julienned
  • 3 stalks green onions, julienned
  • 3 tbsp light soy sauce
  • 1 tbsp sugar
  • 2 tbsp vegetable oil
  • 1/4 cup water

Instructions

  1. Pat the cod fillet dry and place it on a heat-proof plate
  2. Scatter half of the julienned ginger and green onions over the fish
  3. Steam the fish in a steamer basket over boiling water for 8-10 minutes, or until the fish flakes easily with a fork.
  4. Remove the plate from the steamer and carefully discard the excess liquid accumulated on the plate
  5. Top the steamed fish with the remaining fresh ginger and green onions
  6. Whisk together the soy sauce, water, and sugar in a small bowl and pour it over the fish
  7. Heat the vegetable oil in a small pan until smoking hot, then carefully pour the hot oil over the aromatics on the fish to release their fragrance.
