Crispy pan-seared chicken thighs glazed in a savory soy and oyster sauce reduction with aromatic garlic.

Ingredients

  • 2 (240g) skin-on boneless chicken thighs
  • 1/4 tsp salt (to taste)
  • 1/4 tsp black pepper (to taste)
  • 1 tbsp all-purpose flour
  • 1 tbsp cooking oil
  • 2 tbsp garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 tbsp water

Instructions

  1. Season the chicken thighs with salt and pepper, then lightly dust the skin side with flour.
  2. Heat the oil in a pan over medium-high heat and fry the chicken for 3 to 4 minutes per side until the skin is crispy and golden.
  3. Add the minced garlic to the pan and cook for 30 seconds until fragrant.
  4. Whisk together the soy sauce, oyster sauce, sugar, sesame oil, and water in a small bowl.
  5. Pour the sauce over the chicken and cook for 2 to 3 minutes, turning the chicken to coat thoroughly until the sauce thickens and glazes the meat.
