Classic Cheese Chutney Sandwich by Khanawithlove

Toasted sandwich featuring vibrant coriander chutney and melted cheese for a quick, savory snack.

Ingredients

  • 1 cup fresh coriander leaves, packed
  • 1 green chili
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • 4 slices white or sourdough bread
  • 4 slices cheddar cheese
  • 2 tbsp butter, softened

Instructions

  1. Blend the coriander, green chili, lemon juice, and salt with a splash of water until a smooth, spreadable chutney forms.
  2. Spread a generous layer of the coriander chutney onto one side of each bread slice until ready to serve.
  3. Place two slices of cheese onto the chutney-covered side of two bread slices, then top with the remaining bread slices until ready to serve.
  4. Butter the outer sides of the sandwiches evenly until ready to serve.
  5. Toast the sandwiches in a pan over medium heat for 2-3 minutes per side, until the bread is golden brown and the cheese is melted.
