  • 900g (2 lb) boneless chicken thighs
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp hot sauce
  • 300g flour
  • 150g cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp chicken bouillon
  • 1 tsp cajun powder
  • 4 tbsp butter (for hot honey)
  • 1/3 cup honey
  • 1 tbsp cayenne pepper (for hot honey)
  • 8 slider buns
  • 4 tbsp butter (for garlic butter)
  • 1 tsp garlic powder (for garlic butter)
  • 1 tbsp fresh parsley, chopped
  • 8 slices pickles

Instructions

  1. Combine yogurt, milk, egg, and hot sauce in a bowl; add chicken thighs and marinate in the refrigerator for at least 2 hours or overnight.
  2. Whisk flour, cornstarch, and dry spices (garlic powder, onion powder, chili powder, bouillon, cajun powder, salt, pepper) in a large shallow dish.
  3. Remove chicken from marinade, dredge in flour mixture, dip back into the wet marinade, and dredge in flour again for a double coating.
  4. Fry chicken in oil at 350°F (175°C) for 5-6 minutes until golden brown and the internal temperature reaches 170°F.
  5. Melt 4 tbsp butter in a small saucepan, then stir in honey and 1 tbsp cayenne; toss the fried chicken in this glaze.
  6. Combine garlic butter ingredients and microwave for 30 seconds; brush the mixture onto the split slider buns.
  7. Assemble sliders by placing pickles and hot honey chicken on the buns, topping with the bun lid brushed with more garlic butter.
