Fast high-protein beef and broccoli meal prep with a savory, low-carb sauce.

Ingredients
- 1 lb flank steak, thinly sliced against the grain
- 4 cups broccoli florets
- 2 tbsp avocado oil, divided
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1/2 cup low-sodium beef broth
- 1 tbsp cornstarch
- 2 tbsp water
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes, optional
- 2 tbsp sliced green onions, for serving
- 1 tsp sesame seeds, for serving
Instructions
- Whisk the soy sauce, oyster sauce, rice vinegar, honey, beef broth, cornstarch, and water in a small bowl until smooth, about 1 minute.
- Heat 1 tablespoon oil in a large skillet over medium-high heat for 1 minute, then sear the beef in a single layer for 2 to 3 minutes until browned but not fully cooked. Remove it to a plate.
- Add the remaining oil, broccoli, garlic, and ginger to the skillet and stir-fry for 3 to 4 minutes until the broccoli turns bright green and crisp-tender.
- Pour the sauce into the pan and simmer for 1 to 2 minutes, stirring, until it thickens and looks glossy.
- Return the beef to the skillet and toss for 1 to 2 minutes until the meat is cooked through and coated in sauce.
- Serve hot over rice or cauliflower rice, then finish with green onions and sesame seeds.
