Athlete Pancake Bowl by Kelseypoulter
Banana-bread-style pancake bowl packed with protein, healthy carbs, and healthy fats.

Ingredients
- 1 large egg
- 3 tbsp full-fat Greek yogurt
- 1/4 cup whole milk
- 1/2 cup protein pancake mix (such as Kodiak Cakes Power Cakes)
- 1/4 cup vanilla protein powder
- 1 medium ripe banana, mashed
- 1 tsp honey
- 2 tbsp chopped walnuts or almonds
- 1/2 tsp baking powder
Instructions
- Preheat the oven to 350°F and lightly grease a small oven-safe bowl or ramekin, about 8 to 10 ounces.
- Whisk the egg, Greek yogurt, milk, mashed banana, and honey together until smooth, about 30 seconds.
- Stir in the pancake mix, protein powder, chopped nuts, and baking powder just until combined, about 15 to 20 seconds.
- Pour the batter into the prepared bowl and smooth the top so it bakes evenly.
- Bake for 20 to 25 minutes, until the center is set and a toothpick comes out mostly clean.
- Cool for 2 to 3 minutes, then dig in while warm.
