Banana-bread-style pancake bowl packed with protein, healthy carbs, and healthy fats.

Ingredients

  • 1 large egg
  • 3 tbsp full-fat Greek yogurt
  • 1/4 cup whole milk
  • 1/2 cup protein pancake mix (such as Kodiak Cakes Power Cakes)
  • 1/4 cup vanilla protein powder
  • 1 medium ripe banana, mashed
  • 1 tsp honey
  • 2 tbsp chopped walnuts or almonds
  • 1/2 tsp baking powder

Instructions

  1. Preheat the oven to 350°F and lightly grease a small oven-safe bowl or ramekin, about 8 to 10 ounces.
  2. Whisk the egg, Greek yogurt, milk, mashed banana, and honey together until smooth, about 30 seconds.
  3. Stir in the pancake mix, protein powder, chopped nuts, and baking powder just until combined, about 15 to 20 seconds.
  4. Pour the batter into the prepared bowl and smooth the top so it bakes evenly.
  5. Bake for 20 to 25 minutes, until the center is set and a toothpick comes out mostly clean.
  6. Cool for 2 to 3 minutes, then dig in while warm.
