Crispy-skinned baked Russet potatoes topped with savory, seared carne asada and classic steakhouse seasonings.

Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lb carne asada (skirt or flank steak), thinly sliced
  • 2 tbsp vegetable oil (for searing steak)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes clean, pat them dry, and prick each one several times with a fork.
  3. Rub the potatoes with olive oil and season generously with salt and pepper.
  4. Place potatoes directly on the oven rack and bake for 60 minutes, or until the skins are crisp and the centers are tender when pierced with a fork.
  5. While potatoes bake, heat vegetable oil in a heavy skillet over high heat.
  6. Sear the carne asada for 2–3 minutes per side until deeply browned and cooked through, then remove from heat and chop into bite-sized pieces.
  7. Slice the baked potatoes open, fluff the insides with a fork, and top with the prepared carne asada.
