Crispy-skinned baked Russet potatoes topped with savory, seared carne asada and classic steakhouse seasonings.

Ingredients
- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 lb carne asada (skirt or flank steak), thinly sliced
- 2 tbsp vegetable oil (for searing steak)
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes clean, pat them dry, and prick each one several times with a fork.
- Rub the potatoes with olive oil and season generously with salt and pepper.
- Place potatoes directly on the oven rack and bake for 60 minutes, or until the skins are crisp and the centers are tender when pierced with a fork.
- While potatoes bake, heat vegetable oil in a heavy skillet over high heat.
- Sear the carne asada for 2–3 minutes per side until deeply browned and cooked through, then remove from heat and chop into bite-sized pieces.
- Slice the baked potatoes open, fluff the insides with a fork, and top with the prepared carne asada.
