Teriyaki Beef Udon Stir Fry by Kayla Nasara

Tender sirloin strips and chewy udon noodles tossed in a savory, caramelized soy and oyster glaze.

Ingredients
- 1 lb sirloin, thinly sliced
- 0.5 tsp baking soda
- 1.5 tbsp soy sauce (for marinade)
- 1.5 tbsp oyster sauce (for marinade)
- 0.25 cup soy sauce (for sauce)
- 2 tbsp brown sugar
- 2 tbsp oyster sauce (for sauce)
- 2 tbsp sake
- 1 tsp sesame oil
- 1 tbsp neutral oil
- 1 cup yellow onion, sliced
- 3 cloves garlic, minced
- 2 cup vegetable slaw
- 3 stalks green onions, chopped
- 16 oz udon noodles, pre-cooked
- 0.5 tsp black pepper
Instructions
- Combine sliced beef with baking soda, 1.5 tbsp soy sauce, 1.5 tbsp oyster sauce, and black pepper; let marinate for 10 minutes.
- Whisk together 1/4 cup soy sauce, brown sugar, 2 tbsp oyster sauce, sake, sesame oil, and black pepper in a small bowl
- Heat 1 tbsp neutral oil in a large pan or wok over high heat and sear beef until browned, about 3-4 minutes; remove beef from pan.
- Add more oil if needed, then sauté vegetable slaw until softened, about 3 minutes.
- Add yellow onion and the white parts of the green onions, cooking until translucent, about 2 minutes.
- Stir in garlic and pre-cooked udon noodles, tossing for 1 minute.
- Pour in the prepared sauce, return the beef to the pan, and toss everything together for 2 minutes until evenly coated and heated through.
- Garnish with remaining green onion tops and serve immediately.
