Teriyaki Beef Udon Stir Fry by Kayla Nasara

Tender sirloin strips and chewy udon noodles tossed in a savory, caramelized soy and oyster glaze.

Ingredients

  • 1 lb sirloin, thinly sliced
  • 0.5 tsp baking soda
  • 1.5 tbsp soy sauce (for marinade)
  • 1.5 tbsp oyster sauce (for marinade)
  • 0.25 cup soy sauce (for sauce)
  • 2 tbsp brown sugar
  • 2 tbsp oyster sauce (for sauce)
  • 2 tbsp sake
  • 1 tsp sesame oil
  • 1 tbsp neutral oil
  • 1 cup yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 cup vegetable slaw
  • 3 stalks green onions, chopped
  • 16 oz udon noodles, pre-cooked
  • 0.5 tsp black pepper

Instructions

  1. Combine sliced beef with baking soda, 1.5 tbsp soy sauce, 1.5 tbsp oyster sauce, and black pepper; let marinate for 10 minutes.
  2. Whisk together 1/4 cup soy sauce, brown sugar, 2 tbsp oyster sauce, sake, sesame oil, and black pepper in a small bowl
  3. Heat 1 tbsp neutral oil in a large pan or wok over high heat and sear beef until browned, about 3-4 minutes; remove beef from pan.
  4. Add more oil if needed, then sauté vegetable slaw until softened, about 3 minutes.
  5. Add yellow onion and the white parts of the green onions, cooking until translucent, about 2 minutes.
  6. Stir in garlic and pre-cooked udon noodles, tossing for 1 minute.
  7. Pour in the prepared sauce, return the beef to the pan, and toss everything together for 2 minutes until evenly coated and heated through.
  8. Garnish with remaining green onion tops and serve immediately.
