Crispy, thin-patty smash burgers with melted cheese and toasted buns for the ultimate quick dinner.

Ingredients
- 1 lb ground beef (80/20 fat ratio)
- 4 burger buns
- 4 slices american cheese
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp butter
- 0.5 cup diced onion
Instructions
- Divide ground beef into 4 equal portions and form into loose, uncompressed balls.
- Heat a heavy-bottomed cast iron skillet over medium-high heat until smoking slightly.
- Place beef balls in the pan and smash them flat using a heavy spatula, pressing until 1/4 inch thin.
- Season the patties generously with salt and pepper, cooking for 2-3 minutes until a dark crust forms.
- Flip the patties, immediately top with a slice of cheese, and cook for another 1-2 minutes until melted.
- Toast the buttered buns in a separate pan or the edge of the skillet until golden brown.
- Assemble the burgers by placing patties on buns and adding desired toppings like onions.
