Ingredients

  • 1 lb ground beef (80/20 fat ratio)
  • 4 burger buns
  • 4 slices american cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp butter
  • 0.5 cup diced onion

Instructions

  1. Divide ground beef into 4 equal portions and form into loose, uncompressed balls.
  2. Heat a heavy-bottomed cast iron skillet over medium-high heat until smoking slightly.
  3. Place beef balls in the pan and smash them flat using a heavy spatula, pressing until 1/4 inch thin.
  4. Season the patties generously with salt and pepper, cooking for 2-3 minutes until a dark crust forms.
  5. Flip the patties, immediately top with a slice of cheese, and cook for another 1-2 minutes until melted.
  6. Toast the buttered buns in a separate pan or the edge of the skillet until golden brown.
  7. Assemble the burgers by placing patties on buns and adding desired toppings like onions.
