Soft-centered sugar cookies with crisp edges, specifically engineered to hold their shape for decorative icing.

Ingredients

  • 227 g (2 sticks) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 1 large egg
  • 10 ml (2 tsp) vanilla extract
  • 350 g (2 3/4 cup + 1 tbsp) all-purpose flour
  • 1/4 tsp baking powder
  • 8 g (1 tbsp) cornstarch
  • 1/2 tsp salt

Instructions

  1. Beat butter and sugar together on medium speed until just combined to avoid incorporating too much air.
  2. Add the egg and vanilla extract, mixing until incorporated.
  3. Stir in the baking powder, cornstarch, and salt until evenly distributed.
  4. Add the flour in three separate batches, mixing on low speed until the dough forms a ball on the paddle.
  5. Wrap the dough and chill in the refrigerator for at least 1 hour, preferably overnight.
  6. Roll out the chilled dough on a floured surface, using plenty of flour on the rolling pin to prevent sticking.
  7. Cut into desired shapes and place on a baking sheet; freeze for 10 minutes before baking.
  8. Bake at 350°F (177°C) for 11 minutes, rotating the baking sheets at the 7-minute mark for even color.
