Ingredients
- 227 g (2 sticks) unsalted butter, softened
- 200 g (1 cup) granulated sugar
- 1 large egg
- 10 ml (2 tsp) vanilla extract
- 350 g (2 3/4 cup + 1 tbsp) all-purpose flour
- 1/4 tsp baking powder
- 8 g (1 tbsp) cornstarch
- 1/2 tsp salt
Instructions
- Beat butter and sugar together on medium speed until just combined to avoid incorporating too much air.
- Add the egg and vanilla extract, mixing until incorporated.
- Stir in the baking powder, cornstarch, and salt until evenly distributed.
- Add the flour in three separate batches, mixing on low speed until the dough forms a ball on the paddle.
- Wrap the dough and chill in the refrigerator for at least 1 hour, preferably overnight.
- Roll out the chilled dough on a floured surface, using plenty of flour on the rolling pin to prevent sticking.
- Cut into desired shapes and place on a baking sheet; freeze for 10 minutes before baking.
- Bake at 350°F (177°C) for 11 minutes, rotating the baking sheets at the 7-minute mark for even color.
