High Protein Gluten-Free Garlic Swirls by Kalejunkie

Fluffy gluten-free garlic swirls made with Greek yogurt dough, tossed in garlic butter and Parmesan.

Ingredients

  • 2 cups gluten-free flour, plus more for dusting
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 2 cups fat-free plain Greek yogurt
  • 1/4 cup unsalted butter
  • 4 cloves garlic, minced
  • 3 tbsp grated Parmesan cheese
  • 2 tbsp fresh Italian parsley, chopped
  • Marinara or arrabbiata sauce, for serving (optional)

Instructions

  1. Preheat oven to 375°F and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, and salt.
  3. Add the Greek yogurt and mix until a dough ball forms, about 5 minutes by hand or under 1 minute in a stand mixer — it will look crumbly at first but will come together.
  4. Transfer dough to a lightly floured surface; dust with a little extra flour if sticky. Divide into 4 pieces, then cut each piece into 4 more pieces for 16 total.
  5. Roll each piece into a cigar shape about 8 inches long, then coil it up into a swirl. Place 8 swirls per baking sheet.
  6. Bake for 22–23 minutes, until set and lightly golden on the outside.
  7. While swirls finish baking, melt butter in a large pan over medium-low heat. Add minced garlic and cook for 1–2 minutes until fragrant — do not let it burn.
  8. Add the baked swirls to the pan and toss to coat, flipping so the bottom side faces up. Sprinkle with Parmesan and parsley and serve immediately with marinara or arrabbiata sauce if desired.
