Lemon Basil Chicken Salad by Kalefornia Kravings

Shredded chicken tossed with crisp celery and red onion in a bright lemon basil dressing.

Ingredients

  • 2 cup (about 1 lb) shredded cooked chicken
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain greek yogurt
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest (from 1 lemon)
  • 1 clove garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste

Instructions

  1. In a large bowl, combine the mayonnaise, Greek yogurt, fresh lemon juice, lemon zest, minced garlic, chopped fresh basil, salt, and black pepper.
  2. Whisk the dressing ingredients until they are well combined and smooth.
  3. Add the shredded cooked chicken, finely diced celery, and finely diced red onion to the bowl with the dressing.
  4. Gently toss all ingredients together until the chicken and vegetables are thoroughly coated with the lemon basil dressing.
  5. Cover the chicken salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as desired.
