Lemon Basil Chicken Salad by Kalefornia Kravings
Shredded chicken tossed with crisp celery and red onion in a bright lemon basil dressing.

Ingredients
- 2 cup (about 1 lb) shredded cooked chicken
- 2 stalks celery, finely diced
- 1/4 cup red onion, finely diced
- 1/2 cup mayonnaise
- 1/4 cup plain greek yogurt
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest (from 1 lemon)
- 1 clove garlic, minced
- 1/4 cup fresh basil, chopped
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
Instructions
- In a large bowl, combine the mayonnaise, Greek yogurt, fresh lemon juice, lemon zest, minced garlic, chopped fresh basil, salt, and black pepper.
- Whisk the dressing ingredients until they are well combined and smooth.
- Add the shredded cooked chicken, finely diced celery, and finely diced red onion to the bowl with the dressing.
- Gently toss all ingredients together until the chicken and vegetables are thoroughly coated with the lemon basil dressing.
- Cover the chicken salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as desired.
