Honey Roasted Carrots with Feta by Kalefornia Kravings
Sweet-savory roasted carrots finished with feta, dill, and an extra honey drizzle.

Ingredients
- 1 1/2 lb carrots, peeled and cut into sticks or left whole if small
- 2 tbsp olive oil
- 2 tbsp honey, plus 1 tbsp for drizzling
- 2 cloves garlic, minced
- 1 tsp dried dill
- 3/4 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/3 cup crumbled feta cheese
- 1 tbsp fresh dill, chopped, for garnish (optional)
Instructions
- Preheat the oven to 425°F and line a sheet pan with parchment paper.
- Toss the carrots with olive oil, 2 tablespoons honey, garlic, dried dill, salt, and black pepper until evenly coated.
- Spread the carrots in a single layer on the pan and roast for 20-25 minutes, flipping once halfway through, until tender and browned at the edges.
- Transfer the carrots to a serving plate, then sprinkle with feta and fresh dill if using.
- Drizzle the remaining 1 tablespoon honey over the top and serve warm.
