Honey Roasted Carrots with Feta by Kalefornia Kravings

Sweet-savory roasted carrots finished with feta, dill, and an extra honey drizzle.

Ingredients

  • 1 1/2 lb carrots, peeled and cut into sticks or left whole if small
  • 2 tbsp olive oil
  • 2 tbsp honey, plus 1 tbsp for drizzling
  • 2 cloves garlic, minced
  • 1 tsp dried dill
  • 3/4 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/3 cup crumbled feta cheese
  • 1 tbsp fresh dill, chopped, for garnish (optional)

Instructions

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Toss the carrots with olive oil, 2 tablespoons honey, garlic, dried dill, salt, and black pepper until evenly coated.
  3. Spread the carrots in a single layer on the pan and roast for 20-25 minutes, flipping once halfway through, until tender and browned at the edges.
  4. Transfer the carrots to a serving plate, then sprinkle with feta and fresh dill if using.
  5. Drizzle the remaining 1 tablespoon honey over the top and serve warm.
