Avocado Cucumber Salad with Feta by Kalefornia Kravings

Ingredients
- 2 cup mini cucumbers, thinly sliced
- 1 avocado, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh basil, chopped
- 3 tbsp lemon juice
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper, to taste
Instructions
- Cook in a large bowl, combine the thinly sliced cucumbers, diced avocado, crumbled feta cheese, and thinly sliced red onion over medium heat.
- Add the chopped fresh dill and basil to the bowl
- In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to create the vinaigrette
- Pour the vinaigrette over the salad ingredients
- Gently toss all ingredients to combine until evenly coated.
- Serve immediately and enjoy
