A hearty steak sandwich with ciabatta, sliced flank steak, melted cheese, and savory pan juices.

Ingredients

  • 1 ciabatta bread
  • 2 slices havarti cheese
  • 8 oz flank steak
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp neutral oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 sprig fresh herbs (e.g., rosemary, thyme)
  • 2 onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 4 slices bacon
  • 8 asparagus spears
  • 0.25 cup grated parmesan reggiano
  • 2 tbsp fresh parsley, chopped
  • 4 tbsp mayonnaise
  • 2 tbsp grainy dijon mustard
  • 1 tsp worcestershire sauce
  • 1 tbsp hot sauce
  • 0.5 tsp garlic powder

Instructions

  1. Mix sauce ingredients: mayo, grainy dijon, 1 tsp worcestershire, hot sauce, garlic powder, salt, and pepper. Set aside.
  2. Melt 2 tbsp butter in a pan over low heat. Add sliced onions and sweat for 10-15 minutes until softened.
  3. Add 1 tbsp worcestershire, balsamic vinegar, 0.25 tsp salt, and 0.25 tsp black pepper to the onions. Cook low and slow for another 20-25 minutes, deglazing with a tablespoon of water as needed, until deeply caramelized.
  4. Preheat oven to 400°F (200°C).
  5. Wrap 2 asparagus spears with 1 slice of bacon. Repeat for all asparagus.
  6. Bake bacon-wrapped asparagus for 12-15 minutes, or until bacon is crisp and asparagus is tender.
  7. While asparagus bakes, season flank steak with 1 tsp salt and 0.5 tsp black pepper.
  8. Heat 2 tbsp neutral oil in a skillet over medium-high heat. Sear steak for 3-4 minutes per side for medium-rare.
  9. Add 1 tbsp butter, minced garlic, and herbs to the skillet. Baste the steak with the butter for 1 minute.
  10. Transfer steak to a cutting board, tent with foil, and let rest for 5-10 minutes before slicing thinly against the grain.
  11. Slice ciabatta bread in half horizontally and place Havarti cheese slices inside. Toast in a pan or oven until cheese is melted.
  12. Assemble sandwich: spread sauce on the toasted ciabatta, layer with sliced steak, caramelized onions, fresh parsley, bacon-wrapped asparagus, and a sprinkle of parmesan.
  13. Add more sauce on top and close the sandwich. Top with black pepper.
