Vegan Buffalo Chickpea Wings by Justinecooksvegan
Crispy vegan wings made with chickpeas, rice paper, and buffalo sauce, served with optional chives and ranch.

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup buffalo sauce, plus 1/4 cup more for coating
- 8 sheets rice paper
- 2 tbsp chopped chives, optional
- 1 tbsp oil or cooking spray, for baking or air frying
- Vegan ranch, for serving
Instructions
- Preheat the oven to 425°F or the air fryer to 390°F, then line a baking sheet or prep the air fryer basket.
- Pat the chickpeas dry, then toss them with 1/2 cup buffalo sauce until evenly coated.
- Soften one rice paper sheet in warm water for 5 to 10 seconds, stack a second sheet on top, and place a spoonful of chickpeas in the center.
- Fold or roll the rice paper around the chickpeas to form wing shapes, then repeat until all filling is used.
- Brush or spray the wings lightly with oil, then bake for 18 to 20 minutes or air fry for 10 to 12 minutes, until crisp and lightly browned.
- Toss the hot wings with the remaining 1/4 cup buffalo sauce, sprinkle with chives if using, and serve with vegan ranch.
