Creamy Gorgonzola Radiatori with Walnuts and Honey by Justbenjicooking

Radiatori pasta tossed in a creamy gorgonzola sauce topped with crunchy walnuts and a honey drizzle.

Ingredients

  • 250 g radiatori pasta
  • 100 g gorgonzola cheese
  • 120 ml heavy cream
  • 50 g walnuts, chopped
  • 1 tbsp chives, finely chopped
  • 1 tbsp honey
  • 0.25 cup pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook the radiatori according to package directions until al dente.
  2. While the pasta cooks, add the heavy cream and gorgonzola to a wide skillet over medium-low heat.
  3. Stir continuously until the cheese has melted completely and the sauce is smooth, about 3-5 minutes.
  4. Reserve 1/4 cup of pasta water, then drain the pasta
  5. Add the cooked pasta to the skillet with the gorgonzola sauce, adding a splash of the reserved pasta water to help the sauce emulsify and coat the pasta.
  6. Toss for 1-2 minutes until the sauce clings to the ridges of the radiatori.
  7. Transfer to bowls and top with chopped walnuts, fresh chives, and a generous drizzle of honey before serving.
