Greek Lemon Salmon Orzo Bowl by Jumascreations

Pan-seared salmon fillets served over buttery lemon orzo with a crisp cucumber and tomato salad.

Ingredients

  • 2 fillets (approx. 170g/6oz each) salmon fillets
  • 200g (1 cup) orzo pasta
  • 2 tbsp unsalted butter
  • 1 large lemon, juiced and zested
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Boil a pot of salted water and cook the orzo for 8-10 minutes until al dente, then drain.
  2. Toss the cooked orzo with 2 tablespoons of butter, half of the lemon juice, and half of the lemon zest over medium heat until heated through, about 5 min.
  3. Season the salmon fillets with salt and oregano until ready to serve.
  4. Heat olive oil in a skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
  5. Combine the diced cucumber, cherry tomatoes, and kalamata olives in a small bowl; drizzle with a splash of olive oil until ready to serve.
  6. Assemble the bowls by spooning the lemon orzo into dishes, topping with the seared salmon, and adding the fresh vegetable salad and crumbled feta until ready to serve.
