15-Minute Spicy Sticky Udon Noodles by Julie And Amy
Chewy udon noodles tossed in a vibrant, savory-sweet ginger-lime glaze with a spicy chili kick.

Ingredients
- 2 servings udon noodles
- 1 tbsp neutral oil (avocado or vegetable)
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 stalks green onion, white parts chopped
- 3/4 tsp red chili flakes
- 1/2 tsp sesame seeds
- 2 tbsp reduced sodium tamari
- 1 tbsp dark soy sauce
- 1 tsp rice vinegar
- 1 tbsp brown sugar
- 1 lime, zested
- 1/2 lime, juiced
- 2 tbsp fresh cilantro, chopped (for garnish)
- 2 stalks green onion, green parts sliced (for garnish)
Instructions
- Cook the udon noodles according to package instructions until tender, about 3-5 minutes; drain and set aside, tossing with a drop of sesame oil if they stick.
- Heat the neutral oil in a large pan over medium heat until shimmering, then add the minced garlic, ginger, and white scallion parts, cooking for 1-2 minutes until fragrant.
- Stir in the red chili flakes and sesame seeds, cooking for 30 seconds to toast them.
- Reduce the heat to medium-low and whisk in the tamari, dark soy sauce, rice vinegar, brown sugar, and lime zest, simmering for 1 minute until slightly thickened.
- Add the cooked noodles and lime juice to the pan, tossing vigorously for 1-2 minutes until the noodles are evenly coated and glossy.
- Serve immediately, garnished with fresh cilantro and the sliced green scallion parts.
