Ingredients

  • 2 servings udon noodles
  • 1 tbsp neutral oil (avocado or vegetable)
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 stalks green onion, white parts chopped
  • 3/4 tsp red chili flakes
  • 1/2 tsp sesame seeds
  • 2 tbsp reduced sodium tamari
  • 1 tbsp dark soy sauce
  • 1 tsp rice vinegar
  • 1 tbsp brown sugar
  • 1 lime, zested
  • 1/2 lime, juiced
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 2 stalks green onion, green parts sliced (for garnish)

Instructions

  1. Cook the udon noodles according to package instructions until tender, about 3-5 minutes; drain and set aside, tossing with a drop of sesame oil if they stick.
  2. Heat the neutral oil in a large pan over medium heat until shimmering, then add the minced garlic, ginger, and white scallion parts, cooking for 1-2 minutes until fragrant.
  3. Stir in the red chili flakes and sesame seeds, cooking for 30 seconds to toast them.
  4. Reduce the heat to medium-low and whisk in the tamari, dark soy sauce, rice vinegar, brown sugar, and lime zest, simmering for 1 minute until slightly thickened.
  5. Add the cooked noodles and lime juice to the pan, tossing vigorously for 1-2 minutes until the noodles are evenly coated and glossy.
  6. Serve immediately, garnished with fresh cilantro and the sliced green scallion parts.
