Quick 20-minute salmon bowl with rice, vegetables, and a simple savory sauce.

Ingredients

  • 1 salmon fillet (about 6 oz)
  • 1 cup cooked rice
  • 1/2 avocado, sliced
  • 1/2 cup cucumber, sliced
  • 1/2 cup shredded carrots
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp rice vinegar
  • 1 tsp sesame seeds
  • 1 tbsp mayonnaise
  • 1 tsp sriracha
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the rice if needed, then keep it warm while you prepare the salmon and toppings, about 10 minutes.
  2. Season the salmon with salt, pepper, and garlic powder, then heat olive oil in a skillet over medium-high heat for 2 minutes.
  3. Sear the salmon for 3-4 minutes per side until browned outside and just opaque in the center.
  4. Whisk soy sauce, honey, rice vinegar, mayonnaise, and sriracha in a small bowl until smooth, about 1 minute.
  5. Assemble the bowl with rice, salmon, avocado, cucumber, and carrots, then drizzle with sauce and sprinkle with sesame seeds.
  6. Serve immediately while the salmon is hot and the rice is steaming.
