Quick solo dinner bowl with salmon, rice, and simple fresh toppings.

Ingredients

  • 1 salmon fillet (about 6 oz)
  • 1 cup cooked rice
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 avocado, sliced
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup shredded carrots
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp sriracha
  • 1 tsp sesame seeds
  • 1 tbsp mayonnaise

Instructions

  1. Pat the salmon dry, then season it with salt, pepper, and garlic powder.
  2. Heat the olive oil in a skillet over medium-high heat for 2 minutes until shimmering.
  3. Cook the salmon for 3-4 minutes per side, until browned outside and just opaque in the center.
  4. Warm the rice for 1-2 minutes, then spoon it into a bowl.
  5. Mix the soy sauce, honey, sriracha, and mayonnaise into a quick drizzle.
  6. Top the rice with salmon, avocado, cucumber, and carrots, then finish with sesame seeds and the sauce.
