Pan-Seared Flathead With Lemon Butter by Joshbollen

Delicate white flathead fillets pan-seared until golden, finished with a bright lemon and herb butter.

Ingredients
- 400g (14 oz) flathead fillets
- 2 tbsp all-purpose flour
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp fresh parsley, chopped
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Pat the flathead fillets dry with paper towels and season both sides with salt and pepper until ready to serve.
- Lightly dust the fillets with flour, shaking off any excess until ready to serve.
- Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until shimmering.
- Place fillets in the pan and sear for 3 minutes per side until the crust is golden brown and the fish flakes easily with a fork.
- Remove the fish from the pan and set aside.
- Reduce heat to medium, add the remaining tablespoon of butter, lemon juice, and parsley to the pan, swirling for 30 seconds until emulsified.
- Drizzle the lemon butter sauce over the fillets and serve immediately until ready to serve.
