Pan-Seared Flathead With Lemon Butter by Joshbollen

Delicate white flathead fillets pan-seared until golden, finished with a bright lemon and herb butter.

Ingredients

  • 400g (14 oz) flathead fillets
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh parsley, chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Pat the flathead fillets dry with paper towels and season both sides with salt and pepper until ready to serve.
  2. Lightly dust the fillets with flour, shaking off any excess until ready to serve.
  3. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until shimmering.
  4. Place fillets in the pan and sear for 3 minutes per side until the crust is golden brown and the fish flakes easily with a fork.
  5. Remove the fish from the pan and set aside.
  6. Reduce heat to medium, add the remaining tablespoon of butter, lemon juice, and parsley to the pan, swirling for 30 seconds until emulsified.
  7. Drizzle the lemon butter sauce over the fillets and serve immediately until ready to serve.
