Spaghetti And Cheese by Joandbart

Very simple mac-and-cheese style pasta made with spaghetti, mozzarella, cheddar, and cream.

Ingredients

  • 8 oz spaghetti
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp kosher salt, plus more for pasta water
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 tbsp butter
  • 1/4 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti for 8-10 minutes until al dente.
  2. Reserve 1/4 cup pasta water, then drain the spaghetti well.
  3. Melt the butter in a large skillet over medium-low heat, then pour in the cream and warm for 1-2 minutes until steaming.
  4. Add the cheddar and mozzarella gradually, stirring for 2-3 minutes until smooth and fully melted.
  5. Season with salt, black pepper, and garlic powder, then loosen the sauce with a splash of reserved pasta water if needed.
  6. Toss in the spaghetti and stir for 1-2 minutes until every strand is coated and glossy.
  7. Serve immediately while the sauce is creamy and stretchy.
