Wild Garlic Focaccia by Jimstable

Crusty, dimpled Italian flatbread infused with aromatic wild garlic butter and extra virgin olive oil.

Ingredients
- 500g (4 cup) bread flour
- 400ml (1 2/3 cup) warm water
- 7g (1 packet) instant yeast
- 10g (2 tsp) sea salt
- 30ml (2 tbsp) extra virgin olive oil (for dough)
- 50g (3 1/2 tbsp) unsalted butter, softened
- 30g (1 cup) fresh wild garlic, finely chopped
- 30ml (2 tbsp) extra virgin olive oil (for topping)
Instructions
- Whisk together flour, yeast, and salt in a large bowl
- Pour in warm water and olive oil, mixing until a shaggy dough forms.
- Cover the bowl and let the dough rise at room temperature for 2 hours or until doubled in size.
- Transfer the dough to an oiled 9x13 inch baking pan, gently stretching it to fit the corners
- Let the dough rest in the pan for 30 minutes until puffy.
- Preheat your oven to 220°C (425°F).
- Mix the softened butter and chopped wild garlic together in a small bowl.
- Dimple the dough deeply with your fingertips, then dollop the wild garlic butter across the surface
- Drizzle with additional olive oil and bake for 25-30 minutes until golden brown and crisp on the edges.
