Air Fryer Protein Cinnamon Rolls by Jilly Beanzzz
Soft single-serve cinnamon rolls made with blended cottage cheese, air-fried, and topped with sweet icing.

Ingredients
- 50 g low-carb flour or regular/protein flour
- 10 g vanilla protein powder
- 1/4 tsp baking powder
- 1 pinch salt
- 60 g cottage cheese, blended smooth
- 1 tbsp brown sugar substitute
- 1 to 2 tsp ground cinnamon or pumpkin pie spice
- Light butter spray or oil spray, for the board and knife
- Parchment paper, as needed
- 15 g cottage cheese, blended smooth
- 2 tbsp powdered sugar substitute
- 1 tsp fat-free milk, plus more as needed
Instructions
- Blend the cottage cheese until completely smooth and no curds remain, about 30 seconds to 1 minute.
- Mix the flour, protein powder, baking powder, and salt in a bowl until evenly combined.
- Add 60 g blended cottage cheese and stir until a soft dough forms, 1 to 2 minutes; add a tiny splash of water only if needed.
- Spray a board lightly with oil, then press the dough into a thin rectangle about 1/4 inch thick.
- Sprinkle the brown sugar substitute and cinnamon evenly over the dough, then press it in lightly with a spatula.
- Roll the dough up tightly into a log, then slice into 8 to 9 small rolls with a lightly oiled knife.
- Place the rolls on parchment in the air fryer basket and air fry at 325°F for 4 to 5 minutes, checking at 4 minutes so they stay soft.
- Stir the icing ingredients together until smooth and drizzle over the warm rolls right before serving.
