Hainanese-Style Chicken Rice by Jerrycooked

Tender poached chicken served with aromatic ginger-scented rice and a savory scallion dipping oil.

Ingredients
- 1 whole chicken (about 3-4 lbs)
- 2 cup jasmine rice, rinsed
- 3 tbsp fresh ginger, minced
- 4 cloves garlic, minced
- 2 tbsp chicken fat or vegetable oil
- 1/2 cup green onion, thinly sliced
- 1 tsp salt
- 1 tbsp soy sauce
Instructions
- Poach the chicken in a large pot of water with 1 tbsp of ginger and a pinch of salt for 35-40 minutes until cooked through.
- Remove the chicken and immediately submerge in an ice bath for 5 minutes to keep the skin firm, then set aside.
- Sauté the remaining ginger and garlic in chicken fat or oil over medium heat for 2 minutes until fragrant.
- Add the rinsed rice to the pan with the aromatics and toast for 2 minutes, then transfer to a rice cooker with the poaching liquid substituted for water.
- Cook the rice according to the rice cooker setting until fluffy and fully absorbed.
- Mix the scallions with a pinch of salt and a drizzle of hot oil to create a quick dipping sauce over medium heat until heated through, about 5 min.
- Slice the poached chicken and serve over the warm ginger rice with the scallion oil and soy sauce on the side until ready to serve.
