Hainanese-Style Chicken Rice by Jerrycooked

Tender poached chicken served with aromatic ginger-scented rice and a savory scallion dipping oil.

Serves: 4Prep: 15 minCook: 45 min

Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 2 cup jasmine rice, rinsed
  • 3 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 tbsp chicken fat or vegetable oil
  • 1/2 cup green onion, thinly sliced
  • 1 tsp salt
  • 1 tbsp soy sauce

Instructions

  1. Poach the chicken in a large pot of water with 1 tbsp of ginger and a pinch of salt for 35-40 minutes until cooked through.
  2. Remove the chicken and immediately submerge in an ice bath for 5 minutes to keep the skin firm, then set aside.
  3. Sauté the remaining ginger and garlic in chicken fat or oil over medium heat for 2 minutes until fragrant.
  4. Add the rinsed rice to the pan with the aromatics and toast for 2 minutes, then transfer to a rice cooker with the poaching liquid substituted for water.
  5. Cook the rice according to the rice cooker setting until fluffy and fully absorbed.
  6. Mix the scallions with a pinch of salt and a drizzle of hot oil to create a quick dipping sauce over medium heat until heated through, about 5 min.
  7. Slice the poached chicken and serve over the warm ginger rice with the scallion oil and soy sauce on the side until ready to serve.
