Ingredients

  • 250g (9 oz) pork shoulder, thinly sliced
  • 200g (7 oz) chow mein noodles (or egg noodles)
  • 1 tbsp vegetable oil
  • 1 medium onion, sliced
  • 1 cup cabbage, shredded
  • 1 medium carrot, julienned
  • 2 tbsp soy sauce
  • 1 tbsp chili paste (or chili oil)
  • 1 tsp garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Boil the noodles in water for 3-4 minutes until al dente, then drain and rinse with cold water to prevent sticking.
  2. Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
  3. Add the sliced pork and cook for 3-5 minutes until browned and fully cooked through.
  4. Stir in the minced garlic and onions, sautéing for 1-2 minutes until the onions begin to soften.
  5. Add the shredded cabbage and carrots, tossing for 2 minutes until they are vibrant but still crisp.
  6. Add the cooked noodles to the wok, pouring the soy sauce and chili paste over the top until ready to serve.
  7. Toss everything together for 2-3 minutes on high heat until the noodles are well-coated and steaming hot.
  8. Season with salt and pepper to taste before serving immediately until ready to serve.
