Savory prosciutto layered with vibrant, house-made basil pesto on crusty artisanal bread.

Ingredients
- 2 cup fresh basil leaves, packed
- 1/2 cup pecorino romano cheese, grated
- 1/2 cup pine nuts, toasted
- 4 cloves garlic, peeled
- 1/4 tsp red pepper flakes
- 1/2 cup extra virgin olive oil
- 4 slices crusty sourdough or ciabatta bread
- 6 slices prosciutto di parma
Instructions
- Combine basil, pecorino, toasted pine nuts, garlic, and red pepper flakes in a food processor, pulsing until coarsely chopped.
- Stream in the olive oil slowly while the processor is running until the pesto reaches a smooth, emulsified consistency.
- Slice the bread and toast lightly in a pan over medium heat for 2-3 minutes until golden brown.
- Spread a generous layer of pesto onto the bread slices until ready to serve.
- Layer the prosciutto over the pesto and close the sandwiches to serve until ready to serve.
