Ingredients
- 1 lb white fish fillets
- 1 tbsp taco seasoning
- 2 cup cooked jasmine rice
- 0.5 cup fresh cilantro, chopped
- 1 tbsp lime juice
- 1 cup black beans, drained and rinsed
- 1 cup red cabbage, thinly sliced
- 1 avocado, sliced
- 0.5 cup greek yogurt
- 1 jalapeño, seeded
- 1 clove garlic
- 1 tbsp lime juice (for sauce)
Instructions
- Prepare the sauce by blending greek yogurt, jalapeño, garlic, cilantro, and lime juice until smooth; refrigerate until serving.
- Mix cooked rice with fresh cilantro and lime juice to create the cilantro-lime base
- Season the white fish fillets generously with taco seasoning on both sides.
- Heat a skillet over medium-high heat with a drizzle of oil and sear the fish for 3-4 minutes per side until golden and cooked through.
- Assemble the bowls by layering the cilantro-lime rice, black beans, pickled red cabbage, avocado slices, and seared fish.
- Drizzle the prepared jalapeño-verde sauce over the top and serve immediately.
