Ingredients

  • 1 lb white fish fillets
  • 1 tbsp taco seasoning
  • 2 cup cooked jasmine rice
  • 0.5 cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 cup black beans, drained and rinsed
  • 1 cup red cabbage, thinly sliced
  • 1 avocado, sliced
  • 0.5 cup greek yogurt
  • 1 jalapeño, seeded
  • 1 clove garlic
  • 1 tbsp lime juice (for sauce)

Instructions

  1. Prepare the sauce by blending greek yogurt, jalapeño, garlic, cilantro, and lime juice until smooth; refrigerate until serving.
  2. Mix cooked rice with fresh cilantro and lime juice to create the cilantro-lime base
  3. Season the white fish fillets generously with taco seasoning on both sides.
  4. Heat a skillet over medium-high heat with a drizzle of oil and sear the fish for 3-4 minutes per side until golden and cooked through.
  5. Assemble the bowls by layering the cilantro-lime rice, black beans, pickled red cabbage, avocado slices, and seared fish.
  6. Drizzle the prepared jalapeño-verde sauce over the top and serve immediately.
