Ingredients
- 2 tbsp butter
- 2 tbsp extra-virgin olive oil
- 1 lb shrimp, peeled and deveined
- 1 tsp kosher salt
- 1 tsp cracked black pepper
- 0.5 cup shallots, finely chopped
- 4 cloves garlic, minced
- 1.25 cup dry orzo pasta
- 3 cup vegetable or chicken broth
- 8 oz fresh asparagus, cut into 1-inch pieces
- 1 lemon, zested and juiced
- 2 tbsp fresh parsley or dill, chopped
Instructions
- Season shrimp with salt and pepper. In a large skillet, heat 1 tbsp of oil and 1 tbsp of butter over medium-high heat, sear shrimp for 2-3 minutes until opaque, then remove from pan.
- Add remaining oil and butter to the skillet. Sauté shallots for 2 minutes until translucent, then add garlic and cook for 1 minute until fragrant.
- Stir in the dry orzo, toasting it in the aromatic fat for 1-2 minutes until lightly golden.
- Pour in the broth, bring to a gentle simmer, and cook for 8-10 minutes, stirring occasionally, until orzo is al dente and most liquid is absorbed.
- Add asparagus pieces during the final 3-4 minutes of simmering until tender-crisp.
- Return shrimp to the skillet, stir in lemon zest, lemon juice, and fresh herbs, then toss to combine and serve warm
