vibrant, one-pan ground turkey and rice skillet served with refreshing cucumber salad and lemony yogurt.

Ingredients

  • 1 lb ground turkey
  • 1 cup white rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp sumac
  • 2 cup chicken broth
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced
  • 1 tbsp red wine vinegar
  • 0.5 cup greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 0.25 cup fresh herbs (parsley or cilantro)

Instructions

  1. In a small bowl, combine sliced red onion, 1 tsp sumac, and red wine vinegar; set aside to quick-pickle for 10 minutes.
  2. In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes.
  3. Add ground turkey to the skillet and cook until browned, about 6-8 minutes.
  4. Stir in tomato paste and spices, cooking for 1 minute until fragrant.
  5. Add rice to the skillet and toast for 2 minutes, stirring to coat with oil and spices.
  6. Pour in chicken broth, bring to a boil, then cover and simmer on low for 15-20 minutes until rice is tender.
  7. While rice simmers, toss diced cucumber, tomatoes, and fresh herbs with olive oil in a bowl
  8. Whisk yogurt with lemon juice in a small dish
  9. Serve the turkey and rice topped with the cucumber salad and a dollop of lemony yogurt.
