Golden Ground Turkey and Rice Skillet by Jamievespamsrd
vibrant, one-pan ground turkey and rice skillet served with refreshing cucumber salad and lemony yogurt.

Ingredients
- 1 lb ground turkey
- 1 cup white rice
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp sumac
- 2 cup chicken broth
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 0.25 cup red onion, thinly sliced
- 1 tbsp red wine vinegar
- 0.5 cup greek yogurt
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 0.25 cup fresh herbs (parsley or cilantro)
Instructions
- In a small bowl, combine sliced red onion, 1 tsp sumac, and red wine vinegar; set aside to quick-pickle for 10 minutes.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté onion and garlic until softened, about 5 minutes.
- Add ground turkey to the skillet and cook until browned, about 6-8 minutes.
- Stir in tomato paste and spices, cooking for 1 minute until fragrant.
- Add rice to the skillet and toast for 2 minutes, stirring to coat with oil and spices.
- Pour in chicken broth, bring to a boil, then cover and simmer on low for 15-20 minutes until rice is tender.
- While rice simmers, toss diced cucumber, tomatoes, and fresh herbs with olive oil in a bowl
- Whisk yogurt with lemon juice in a small dish
- Serve the turkey and rice topped with the cucumber salad and a dollop of lemony yogurt.
