Fresh Asparagus and Feta Salad by Jamievespamsrd
vibrant 20-minute spring salad featuring roasted asparagus, salty feta, and a bright lemon-shallot dressing.

Ingredients
- 3 tbsp minced shallots
- 1.5 tbsp fresh lemon juice
- 0.33 cup extra-virgin olive oil
- 0.5 tsp kosher salt
- 0.25 tsp black pepper
- 1 lb asparagus, trimmed
- 0.33 cup roasted, salted pistachios
- 3 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 2 oz feta cheese, crumbled
Instructions
- Whisk the minced shallots, lemon juice, olive oil, salt, and pepper in a small bowl to create the vinaigrette
- Blanch or steam the asparagus for 3-5 minutes until tender-crisp, then immediately plunge into an ice bath to stop cooking.
- Drain the asparagus thoroughly and pat dry with a clean towel
- Transfer the asparagus to a serving platter and drizzle with the prepared dressing.
- Top with the roasted pistachios, chopped fresh dill, chopped fresh parsley, and crumbled feta cheese before serving.
