vibrant 20-minute spring salad featuring roasted asparagus, salty feta, and a bright lemon-shallot dressing.

Ingredients

  • 3 tbsp minced shallots
  • 1.5 tbsp fresh lemon juice
  • 0.33 cup extra-virgin olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 lb asparagus, trimmed
  • 0.33 cup roasted, salted pistachios
  • 3 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 oz feta cheese, crumbled

Instructions

  1. Whisk the minced shallots, lemon juice, olive oil, salt, and pepper in a small bowl to create the vinaigrette
  2. Blanch or steam the asparagus for 3-5 minutes until tender-crisp, then immediately plunge into an ice bath to stop cooking.
  3. Drain the asparagus thoroughly and pat dry with a clean towel
  4. Transfer the asparagus to a serving platter and drizzle with the prepared dressing.
  5. Top with the roasted pistachios, chopped fresh dill, chopped fresh parsley, and crumbled feta cheese before serving.
