Ingredients

  • 0.25 cup tahini
  • 2 tbsp lower-sodium tamari
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 1 clove garlic, minced
  • 5 cup napa cabbage, chopped
  • 2 cup rotisserie chicken, shredded
  • 1 cup carrots, shredded
  • 0.75 cup green onions, sliced
  • 0.75 cup roasted salted cashews
  • 0.25 cup fresh cilantro, chopped
  • 2 tbsp toasted sesame seeds

Instructions

  1. In a small bowl or jar, whisk together tahini, tamari, rice vinegar, maple syrup, sesame oil, and minced garlic until smooth; add a teaspoon of warm water if needed to thin the dressing.
  2. In a large mixing bowl, combine the chopped Napa cabbage, shredded rotisserie chicken, shredded carrots, sliced green onions, and chopped cilantro.
  3. Pour the dressing over the salad mixture and toss thoroughly until all ingredients are evenly coated.
  4. Fold in the roasted cashews and toasted sesame seeds just before serving to maintain their crunch
