Ingredients
- 0.25 cup tahini
- 2 tbsp lower-sodium tamari
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tbsp toasted sesame oil
- 1 clove garlic, minced
- 5 cup napa cabbage, chopped
- 2 cup rotisserie chicken, shredded
- 1 cup carrots, shredded
- 0.75 cup green onions, sliced
- 0.75 cup roasted salted cashews
- 0.25 cup fresh cilantro, chopped
- 2 tbsp toasted sesame seeds
Instructions
- In a small bowl or jar, whisk together tahini, tamari, rice vinegar, maple syrup, sesame oil, and minced garlic until smooth; add a teaspoon of warm water if needed to thin the dressing.
- In a large mixing bowl, combine the chopped Napa cabbage, shredded rotisserie chicken, shredded carrots, sliced green onions, and chopped cilantro.
- Pour the dressing over the salad mixture and toss thoroughly until all ingredients are evenly coated.
- Fold in the roasted cashews and toasted sesame seeds just before serving to maintain their crunch
