25 Minute Mediterranean Halloumi Pitas by Jamievespamsrd
Crispy honey-harissa glazed halloumi served in warm pita pockets with fresh cucumber-tomato salad and cool tzatziki.

Ingredients
- 8 oz halloumi cheese, sliced
- 2 tbsp honey
- 1 tbsp harissa paste
- 4 pita breads
- 1 cup tzatziki
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil
Instructions
- In a small bowl, whisk together the honey and harissa paste to create the glaze
- Dice the cucumber and tomatoes, then toss them together in a bowl to create the salad
- Heat olive oil in a non-stick skillet over medium-high heat.
- Add halloumi slices to the skillet and sear for 2-3 minutes per side until golden brown.
- Reduce heat to low, pour the honey-harissa glaze over the halloumi, and toss gently for 1 minute until coated and caramelized.
- Warm the pita pockets in an oven or toaster.
- Assemble by spreading a generous amount of tzatziki inside each pita, followed by the cucumber-tomato salad and the glazed halloumi.
