25 Minute Mediterranean Halloumi Pitas by Jamievespamsrd

Crispy honey-harissa glazed halloumi served in warm pita pockets with fresh cucumber-tomato salad and cool tzatziki.

Ingredients

  • 8 oz halloumi cheese, sliced
  • 2 tbsp honey
  • 1 tbsp harissa paste
  • 4 pita breads
  • 1 cup tzatziki
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil

Instructions

  1. In a small bowl, whisk together the honey and harissa paste to create the glaze
  2. Dice the cucumber and tomatoes, then toss them together in a bowl to create the salad
  3. Heat olive oil in a non-stick skillet over medium-high heat.
  4. Add halloumi slices to the skillet and sear for 2-3 minutes per side until golden brown.
  5. Reduce heat to low, pour the honey-harissa glaze over the halloumi, and toss gently for 1 minute until coated and caramelized.
  6. Warm the pita pockets in an oven or toaster.
  7. Assemble by spreading a generous amount of tzatziki inside each pita, followed by the cucumber-tomato salad and the glazed halloumi.
