Steamed soup dumplings bathed in a fragrant, spicy Thai red curry broth with aromatic aromatics.

Ingredients
- 10 frozen soup dumplings
- 1 tbsp neutral oil
- 1 tbsp thai red curry paste
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1 cup coconut milk
- 1/2 cup chicken or vegetable broth
- 1 tsp fish sauce
- 1 tsp brown sugar
Instructions
- Heat the oil in a medium saucepan over medium heat and sauté the onion until translucent, about 4 minutes.
- Stir in the Thai red curry paste and minced garlic, cooking for 1 minute until fragrant.
- Pour in the coconut milk and broth, whisking to combine, then bring to a gentle simmer for 5 minutes.
- Season the broth with fish sauce and brown sugar, adjusting to taste until ready to serve.
- Add the frozen soup dumplings directly into the simmering broth and cook for 6-8 minutes until the dumplings are heated through and tender.
- Serve immediately in bowls, ensuring each portion gets plenty of the curry broth until ready to serve.
