Multigrain Rice with Lentils and Super-Grains.

Ingredients
- 1½ cups basmati rice (white or brown, diabetic-friendly variety)
- 1 cup mixed quinoa
- ½ cup green or brown lentils
- ½ cup green mung beans
- ½ cup adzuki (red) beans
- Water or stock for soaking and cooking (2 cups liquid per 1 cup grain mix)
Instructions
- Combine all grains, lentils, and beans in a large bowl and stir to mix evenly.
- Cover completely with cold water and soak for at least 3 hours, or ideally overnight — this ensures even cooking and improves digestibility.
- Drain and rinse the soaked mixture thoroughly under cold running water.
- Measure the soaked grain mix and add to a pot with a 1:2 ratio of water or stock (e.g., 3 cups grain mix to 6 cups liquid). Bring to a boil over high heat.
- Once boiling, cover the pot, reduce heat to low, and simmer for 25–30 minutes until the grains are light, fluffy, and all liquid is absorbed.
- Remove from heat and let steam, covered, for 5 minutes. Fluff with a fork before serving.
- For meal prep, divide into portions, cool completely, and freeze in airtight containers for up to 3 months. Defrost as needed.
