Multigrain Rice with Lentils and Super-Grains.

Serves: 6Prep: 3 hr (soaking) + 10 min activeCook: 30 min

Ingredients

  • 1½ cups basmati rice (white or brown, diabetic-friendly variety)
  • 1 cup mixed quinoa
  • ½ cup green or brown lentils
  • ½ cup green mung beans
  • ½ cup adzuki (red) beans
  • Water or stock for soaking and cooking (2 cups liquid per 1 cup grain mix)

Instructions

  1. Combine all grains, lentils, and beans in a large bowl and stir to mix evenly.
  2. Cover completely with cold water and soak for at least 3 hours, or ideally overnight — this ensures even cooking and improves digestibility.
  3. Drain and rinse the soaked mixture thoroughly under cold running water.
  4. Measure the soaked grain mix and add to a pot with a 1:2 ratio of water or stock (e.g., 3 cups grain mix to 6 cups liquid). Bring to a boil over high heat.
  5. Once boiling, cover the pot, reduce heat to low, and simmer for 25–30 minutes until the grains are light, fluffy, and all liquid is absorbed.
  6. Remove from heat and let steam, covered, for 5 minutes. Fluff with a fork before serving.
  7. For meal prep, divide into portions, cool completely, and freeze in airtight containers for up to 3 months. Defrost as needed.
