Easy No Sugar Added Diplomat Cake by Iuliamlupu

Delightful diplomat cake featuring ladyfingers, fresh fruit, and a creamy filling with no added sugar.

Ingredients

  • 200g (7 oz) ladyfingers
  • 500ml (2 cup) whipping cream
  • 100g (1/2 cup) powdered sugar substitute
  • 10g (1 packet) gelatin powder
  • 50ml (3.5 tbsp) cold water
  • 300g (2 cup) mixed fresh fruit, chopped
  • 1 tsp vanilla extract

Instructions

  1. Bloom the gelatin by sprinkling it over cold water in a small bowl and letting it sit for 5-10 minutes.
  2. In a large bowl, whip the cream with the powdered sugar substitute and vanilla extract until stiff peaks form.
  3. Gently heat the bloomed gelatin in the microwave for 15-20 seconds or until just melted and liquid.
  4. Slowly drizzle the melted gelatin into the whipped cream while mixing on low speed, ensuring it's fully incorporated until ready to serve.
  5. Fold in the chopped fresh fruit into the cream mixture over medium heat until heated through, about 5 min.
  6. Line the bottom of a springform pan with ladyfingers, breaking them to fit if necessary until ready to serve.
  7. Pour half of the fruit and cream mixture over the ladyfingers until ready to serve.
  8. Add another layer of ladyfingers on top of the cream mixture until ready to serve.
  9. Pour the remaining fruit and cream mixture over the second layer of ladyfingers until ready to serve.
  10. Cover the pan and refrigerate for at least 4 hours, or until firm.
  11. Carefully remove the sides of the springform pan before serving until ready to serve.
