Easy No Sugar Added Diplomat Cake by Iuliamlupu

Delightful diplomat cake featuring ladyfingers, fresh fruit, and a creamy filling with no added sugar.

Ingredients
- 200g (7 oz) ladyfingers
- 500ml (2 cup) whipping cream
- 100g (1/2 cup) powdered sugar substitute
- 10g (1 packet) gelatin powder
- 50ml (3.5 tbsp) cold water
- 300g (2 cup) mixed fresh fruit, chopped
- 1 tsp vanilla extract
Instructions
- Bloom the gelatin by sprinkling it over cold water in a small bowl and letting it sit for 5-10 minutes.
- In a large bowl, whip the cream with the powdered sugar substitute and vanilla extract until stiff peaks form.
- Gently heat the bloomed gelatin in the microwave for 15-20 seconds or until just melted and liquid.
- Slowly drizzle the melted gelatin into the whipped cream while mixing on low speed, ensuring it's fully incorporated until ready to serve.
- Fold in the chopped fresh fruit into the cream mixture over medium heat until heated through, about 5 min.
- Line the bottom of a springform pan with ladyfingers, breaking them to fit if necessary until ready to serve.
- Pour half of the fruit and cream mixture over the ladyfingers until ready to serve.
- Add another layer of ladyfingers on top of the cream mixture until ready to serve.
- Pour the remaining fruit and cream mixture over the second layer of ladyfingers until ready to serve.
- Cover the pan and refrigerate for at least 4 hours, or until firm.
- Carefully remove the sides of the springform pan before serving until ready to serve.
