Ingredients

  • 1 hispi cabbage
  • 3 tbsp butter, room temperature
  • 1 tbsp miso paste
  • 1 large clove garlic
  • 2 tbsp labneh or thick greek yogurt
  • 1 tbsp crispy chili oil
  • 1 tsp fresh dill, chopped

Instructions

  1. Quarter the cabbage lengthwise.
  2. Heat a large skillet over high heat and sear the cabbage quarters until a deep brown crust develops on both sides, about 3-4 minutes per side.
  3. In a small bowl, combine softened butter, miso paste, and grated garlic; whisk until smooth.
  4. Brush the miso butter mixture generously over the cabbage segments, ensuring it gets into the layers.
  5. Place cabbage face down on a baking sheet and roast at 180C (350F) for 25 minutes, flipping halfway through, until tender.
  6. Optional: Broil for 1-2 minutes at the end to deepen the char.
  7. Serve immediately with a dollop of labneh, a drizzle of chili oil, and a sprinkle of fresh dill.
