Crock Pot Cowboy Soup by Itsthatrecipeguy
Hearty ground beef and smoked sausage stew with tender potatoes, beans, and fire-roasted corn in broth.

Ingredients
- 1 lb ground beef
- 12 oz smoked beef sausage, sliced into coins
- 1 lb baby yukon gold potatoes, quartered
- 15 oz black beans, drained and rinsed
- 15 oz pinto beans, drained
- 15 oz fire-roasted corn, drained
- 15 oz fire-roasted diced tomatoes
- 4 cup low-sodium beef broth
- 1 medium yellow onion, diced
- 1 medium red bell pepper, seeded and diced
- 4 oz diced green chiles
- 3 tsp garlic, minced
- 0.25 cup barbecue sauce
- 1 tbsp chili powder
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 tsp salt
Instructions
- Heat a large skillet over medium-high heat and cook ground beef until browned, breaking into crumbles for about 5-7 minutes.
- Drain excess grease from the skillet and transfer the cooked beef into the slow cooker.
- Add the sliced smoked sausage, onion, garlic, potatoes, green chiles, bell pepper, beans, corn, tomatoes, broth, barbecue sauce, and all seasonings to the slow cooker.
- Stir all ingredients until well combined.
- Cover and cook on high for 4-5 hours or on low for 6-7 hours until potatoes are tender.
- Adjust seasonings to taste and serve hot with desired garnishes.
