Hearty ground beef and smoked sausage stew with tender potatoes, beans, and fire-roasted corn in broth.

Ingredients

  • 1 lb ground beef
  • 12 oz smoked beef sausage, sliced into coins
  • 1 lb baby yukon gold potatoes, quartered
  • 15 oz black beans, drained and rinsed
  • 15 oz pinto beans, drained
  • 15 oz fire-roasted corn, drained
  • 15 oz fire-roasted diced tomatoes
  • 4 cup low-sodium beef broth
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, seeded and diced
  • 4 oz diced green chiles
  • 3 tsp garlic, minced
  • 0.25 cup barbecue sauce
  • 1 tbsp chili powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp salt

Instructions

  1. Heat a large skillet over medium-high heat and cook ground beef until browned, breaking into crumbles for about 5-7 minutes.
  2. Drain excess grease from the skillet and transfer the cooked beef into the slow cooker.
  3. Add the sliced smoked sausage, onion, garlic, potatoes, green chiles, bell pepper, beans, corn, tomatoes, broth, barbecue sauce, and all seasonings to the slow cooker.
  4. Stir all ingredients until well combined.
  5. Cover and cook on high for 4-5 hours or on low for 6-7 hours until potatoes are tender.
  6. Adjust seasonings to taste and serve hot with desired garnishes.
