Ingredients
- 1 lb ground beef
- 2 cup elbow macaroni
- 1.5 cup cheddar cheese, shredded
- 1 tbsp olive oil
- 0.5 medium yellow onion, diced
- 1 medium bell pepper, diced
- 1 medium carrot, peeled and finely diced
- 3 tsp garlic, minced
- 15 oz petite diced tomatoes, drained
- 24 oz pasta sauce
- 3 cup low-sodium beef broth
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp italian seasoning
- 2 bay leaves
Instructions
- Heat olive oil in a large pot over medium-high heat. Add onion, bell pepper, and carrots; cook for 3-4 minutes, stirring occasionally, until slightly softened.
- Add ground beef and cook until no longer pink, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Drain excess grease from the pot if necessary.
- Season the beef with black pepper, paprika, and Italian seasoning.
- Pour in diced tomatoes, pasta sauce, beef broth, elbow macaroni, and bay leaves; stir well to combine.
- Bring the mixture to a boil, then reduce heat to a gentle simmer. Cook for 20 minutes, stirring occasionally, until the pasta is tender.
- Remove the bay leaves and stir in the cheddar cheese until melted and well incorporated before serving.
