Ingredients

  • 1 lb ground beef
  • 2 cup elbow macaroni
  • 1.5 cup cheddar cheese, shredded
  • 1 tbsp olive oil
  • 0.5 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 1 medium carrot, peeled and finely diced
  • 3 tsp garlic, minced
  • 15 oz petite diced tomatoes, drained
  • 24 oz pasta sauce
  • 3 cup low-sodium beef broth
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp italian seasoning
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, bell pepper, and carrots; cook for 3-4 minutes, stirring occasionally, until slightly softened.
  2. Add ground beef and cook until no longer pink, about 5-7 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Drain excess grease from the pot if necessary.
  4. Season the beef with black pepper, paprika, and Italian seasoning.
  5. Pour in diced tomatoes, pasta sauce, beef broth, elbow macaroni, and bay leaves; stir well to combine.
  6. Bring the mixture to a boil, then reduce heat to a gentle simmer. Cook for 20 minutes, stirring occasionally, until the pasta is tender.
  7. Remove the bay leaves and stir in the cheddar cheese until melted and well incorporated before serving.
