Chili Cornbread Casserole by Itsthatrecipeguy
Hearty chili base topped with golden, tender cornbread and melted cheese in a one-pan bake.

Ingredients
- 1 lb ground beef
- 1 yellow onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 packet chili seasoning
- 1 cup tomato sauce
- 2 tbsp tomato paste
- 4 oz diced green chilies
- 14.5 oz diced tomatoes
- 15 oz kidney beans, drained and rinsed
- 15 oz pinto beans, drained and rinsed
- 1/2 cup beef broth
- 1.5 cup shredded cheddar cheese
- 1 box cornbread mix (plus required ingredients)
Instructions
- Preheat oven to 400°F (200°C).
- Sauté bell peppers and onions in a large oven-safe skillet over medium heat for 5-7 minutes until soft.
- Add ground beef to the skillet, cooking until browned; drain excess grease.
- Stir in garlic, chili seasoning, tomato sauce, tomato paste, green chilies, diced tomatoes, beans, and beef broth; simmer for 5-10 minutes.
- Sprinkle shredded cheese over the chili mixture.
- Prepare cornbread batter according to package instructions and pour evenly over the chili and cheese.
- Bake for 25-30 minutes until the cornbread is golden brown and cooked through.
