Hearty chili base topped with golden, tender cornbread and melted cheese in a one-pan bake.

Ingredients

  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 packet chili seasoning
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 4 oz diced green chilies
  • 14.5 oz diced tomatoes
  • 15 oz kidney beans, drained and rinsed
  • 15 oz pinto beans, drained and rinsed
  • 1/2 cup beef broth
  • 1.5 cup shredded cheddar cheese
  • 1 box cornbread mix (plus required ingredients)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sauté bell peppers and onions in a large oven-safe skillet over medium heat for 5-7 minutes until soft.
  3. Add ground beef to the skillet, cooking until browned; drain excess grease.
  4. Stir in garlic, chili seasoning, tomato sauce, tomato paste, green chilies, diced tomatoes, beans, and beef broth; simmer for 5-10 minutes.
  5. Sprinkle shredded cheese over the chili mixture.
  6. Prepare cornbread batter according to package instructions and pour evenly over the chili and cheese.
  7. Bake for 25-30 minutes until the cornbread is golden brown and cooked through.
