One-Pot Cheesy Taco Rice by Itsnormalfood
Seasoned ground beef and black beans simmered with taco-spiced rice, bell peppers, and fresh spinach.

Ingredients
- 0.5 lb ground beef
- 0.5 red bell pepper, sliced
- 0.5 white onion, sliced
- 14.5 oz crushed tomatoes
- 15 oz black beans, with liquid
- 1 knorr taco rice packet
- 1.5 cup water
- 1 cup chopped spinach
- 0.5 cup shredded mexican cheese
- 1/2 tsp (adjust to taste) salt and pepper
Instructions
- Brown ground beef in a large pot over medium heat until cooked through.
- Add sliced bell pepper and onion to the pot and sauté for 5 minutes until softened.
- Pour in the crushed tomatoes and the entire can of black beans with their liquid.
- Add 1.5 cups of water and the Knorr taco rice packet, stirring to combine.
- Bring the mixture to a boil, then reduce heat to low and simmer for 7-10 minutes, stirring occasionally, until rice is fully cooked.
- Season with salt and pepper to taste.
- Turn off the heat, stir in the chopped spinach and shredded cheese until melted, then serve.
