Seasoned ground beef and black beans simmered with taco-spiced rice, bell peppers, and fresh spinach.

Ingredients

  • 0.5 lb ground beef
  • 0.5 red bell pepper, sliced
  • 0.5 white onion, sliced
  • 14.5 oz crushed tomatoes
  • 15 oz black beans, with liquid
  • 1 knorr taco rice packet
  • 1.5 cup water
  • 1 cup chopped spinach
  • 0.5 cup shredded mexican cheese
  • 1/2 tsp (adjust to taste) salt and pepper

Instructions

  1. Brown ground beef in a large pot over medium heat until cooked through.
  2. Add sliced bell pepper and onion to the pot and sauté for 5 minutes until softened.
  3. Pour in the crushed tomatoes and the entire can of black beans with their liquid.
  4. Add 1.5 cups of water and the Knorr taco rice packet, stirring to combine.
  5. Bring the mixture to a boil, then reduce heat to low and simmer for 7-10 minutes, stirring occasionally, until rice is fully cooked.
  6. Season with salt and pepper to taste.
  7. Turn off the heat, stir in the chopped spinach and shredded cheese until melted, then serve.
