Ingredients

  • 1 lb hot italian sausage
  • 1 lb ground beef
  • 24 oz marinara sauce
  • 1/2 cup water
  • 1 lb spaghetti noodles, cooked per package
  • 8 oz cottage cheese
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 cup kale, chopped (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.
  2. Cook spaghetti noodles according to package instructions until al dente; drain and set aside.
  3. Brown the italian sausage and ground beef in a large pan over medium-high heat until fully cooked, about 8-10 minutes.
  4. Stir in the marinara sauce and the water into the meat pan. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. While the sauce simmers, combine cottage cheese, cream cheese, sour cream, mozzarella, parmesan, and kale in a bowl until uniform.
  6. Assemble the casserole by layering cooked spaghetti, the cheese mixture, and the meat sauce in the prepared baking dish.
  7. Top with extra shredded mozzarella and parmesan if desired.
  8. Bake for 20-30 minutes until the top is golden and the edges are bubbling.
