Grinder Sub Sandwiches by Itsnormalfood
Toasted sub rolls layered with deli meats, provolone, and a zesty roasted red pepper grinder salad.

Ingredients
- 4 sub rolls, halved
- 8 slices provolone cheese
- 1/2 lb deli ham, thinly sliced
- 1/2 lb deli turkey, thinly sliced
- 4 oz salami, thinly sliced
- 4 oz pepperoni, thinly sliced
- 1/2 cup mayonnaise
- 1/4 cup roasted red peppers, jarred
- 2 cup lettuce, shredded and rinsed
- 1/4 red onion, thinly sliced
- 1/3 cup pepperoncini, sliced
- 1 tbsp red wine vinegar
- 1/4 cup parmesan cheese, grated
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
Instructions
- Preheat your oven to 425°F (220°C).
- Place sub rolls open-faced on a baking sheet, top with provolone slices, and bake for 3-5 minutes until the cheese is melted and bubbly.
- Blend mayonnaise and roasted red peppers in a food processor until smooth.
- In a large bowl, combine the red pepper mayo, shredded lettuce, sliced red onion, pepperoncini, red wine vinegar, parmesan, salt, and pepper; toss well to coat.
- Assemble the sandwiches by folding the ham, turkey, salami, and pepperoni slices to create volume, then top generously with the grinder salad mixture.
- Wrap the finished sandwiches in foil before serving to contain the fillings.
