Toasted sub rolls layered with deli meats, provolone, and a zesty roasted red pepper grinder salad.

Ingredients

  • 4 sub rolls, halved
  • 8 slices provolone cheese
  • 1/2 lb deli ham, thinly sliced
  • 1/2 lb deli turkey, thinly sliced
  • 4 oz salami, thinly sliced
  • 4 oz pepperoni, thinly sliced
  • 1/2 cup mayonnaise
  • 1/4 cup roasted red peppers, jarred
  • 2 cup lettuce, shredded and rinsed
  • 1/4 red onion, thinly sliced
  • 1/3 cup pepperoncini, sliced
  • 1 tbsp red wine vinegar
  • 1/4 cup parmesan cheese, grated
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place sub rolls open-faced on a baking sheet, top with provolone slices, and bake for 3-5 minutes until the cheese is melted and bubbly.
  3. Blend mayonnaise and roasted red peppers in a food processor until smooth.
  4. In a large bowl, combine the red pepper mayo, shredded lettuce, sliced red onion, pepperoncini, red wine vinegar, parmesan, salt, and pepper; toss well to coat.
  5. Assemble the sandwiches by folding the ham, turkey, salami, and pepperoni slices to create volume, then top generously with the grinder salad mixture.
  6. Wrap the finished sandwiches in foil before serving to contain the fillings.
